This NYT’s best seller is written by a physician who attributes many of our current health maladies to the wheat in our diet. This is not your great grandparents’ wheat, but the current day’s much-modified-by-agricultural-practices wheat. And more specifically, wheat gluten. Doctor Davis finds that gluten ingestion causes rapid increases in glucose levels, which leads to diabetes, vascular disorders, inflammation, and more. You may want to consider these findings with other scientific sources. I found enough to convince me to make some changes to my diet. Enjoy!
